Gather around the Round Table in the Big Kitchen at Rubel Castle - the heart of Castle activities and DIY homesteading. Enjoy the fire and get cooking...um fermenting! In this pre-Thanksgiving workshop you will learn the principles and benefits of fermentation while making two recipes. These will both be ready to serve on Thanksgiving.
What is fermentation? It is the use of friendly microbes to transform and preserve fresh foods. Wine, yogurt, cheese, coffee, chocolate, krauts, miso and kimchi are familiar examples. Fermentation is a living process unlike vinegar pickling or canning.
What’s cooking? Actually it’s fermenting...we will make something savory & something sweet...
Red Cabbage Kraut.
We’ll learn how to make a simple, delicious red cabbage sauerkraut focusing on technique and best practices. You will get your hands in there and make a 32 oz jar of prepared kraut. Examples of the final kraut will be available at the workshop to taste.
Fermented Cranberry and Orange Sauce.
Cranberries are an indigenous North American fruit cultivated by the native peoples of this land. This recipe is a savory take on a Thanksgiving standard made with oranges from Rubel Castle's own historic citrus trees. You will make a pint jar and have recipes and instructions to make more.

What do I need to bring? We will supply the food, basic equipment and know-how. Please bring with you:
- Portable chopping board
- Your favorite chopping knife
- Comfortable clothes appropriate for the days weather
About the Instructor: Obsessed with fermentation techniques for 7 years now, Helen Driscoll has fussed with food since she was a tot (making her first apple pie at 3, according to her mom.) Her career includes professional cooking, antiquarian books, writing, stationery design and event management.
ABOUT RUBEL CASTLE
Rubel Castle is a monumental folk architecture site nestled in the foothills of Glendora. It was built by hand by Michael Rubel and his "pharmhands" over several decades. Its stone masonry was handcrafted from river rock, recycled materials and an assemblage of the relics and artifacts of Glendora's early agricultural and industrial eras. Michael's innovative use of both natural and cultural materials makes Rubel Castle an exceptionally important masterwork within the context of folk art environments in California. It also serves as a rare resource and physical reminder of the citrus industry, which played a significant role in the development of the area in the late-nineteenth and early-twentieth centuries.
